Every day Ferrarini & Bonetti carefully oversees every stage of its work: from the feeding of the cows and the quality of the milk, through to the slow aging and DOP certification of every wheel.

13 months
Delicate notes of fresh milk, yogurt and butter, accompanied by vegetal hints of grass and boiled vegetables, with a sweet and slightly acidic flavour. The first tyrosine crystals begin to appear.
